Avocado spaghetti

Ingredients

  • 100g of spaghetti / pasta of your choice

  • 1/2 an avocado

  • 1/2 a lemon

  • 1/4 cup of frozen peas

  • Four cherry tomatoes

  • Two asparagus spears

  • Teaspoon of parmesan cheese

  • Salt and pepper to taste

What to do

  • Boil half a litre of water in a pan. Once boiled add a pinch of salt and cook the pasta as directed on the packet. 2mins before the pasta is due to finish cooking add the frozen peas and chopped asparagus

  • In a bowl, add the avocado and smash with a fork until it becomes a paste like mixture. Add the juice of half a lemon, the chopped tomatoes and season with salt and pepper.

  • Once the pasta and veggies are cooked, drain and stir in the avocado mix

  • Season with black pepper and top with parmesan cheese
