Ingredients
100g of spaghetti / pasta of your choice
1/2 an avocado
1/2 a lemon
1/4 cup of frozen peas
Four cherry tomatoes
Two asparagus spears
Teaspoon of parmesan cheese
Salt and pepper to taste
What to do
Boil half a litre of water in a pan. Once boiled add a pinch of salt and cook the pasta as directed on the packet. 2mins before the pasta is due to finish cooking add the frozen peas and chopped asparagus
In a bowl, add the avocado and smash with a fork until it becomes a paste like mixture. Add the juice of half a lemon, the chopped tomatoes and season with salt and pepper.
Once the pasta and veggies are cooked, drain and stir in the avocado mix
Season with black pepper and top with parmesan cheese
