Home-made carbonara with greens
Carbonara

Ingredients

  • 2 slices of parma ham

  • 100g pasta (your choice)

  • 1/4 of small white onion

  • 2 cloves of garlic

  • 1 egg

  • 1/4 frozen peas

  • 2 tablespoons parmesan cheese

  • Salt and pepper to taste

What to do

Pasta

  • Bring half a litre of water to the boil and add a pinch of salt. Add the pasta and cook to the directions on the packet

  • 2 minutes before the pasta is due to finish cooking add the peas

Carbonara mix

  • Sautee the onion and garlic over a medium heat until soft

  • Slice the parma ham into small pieces and warm through in the onion, garlic mix

Carbonara sauce

  • Crack the egg into a bowl and whisk

  • Add 1.5 tablespoons of parmesan cheese and season with salt and pepper

Bringing it together

  • Drain the pasta and peas and add the carbonara mix; stir through

  • Slowly stir through the carbonara sauce so as not to scramble the egg

  • Add to a bowl, sprinkle with the remainder of the cheese and season with black pepper
