Ingredients
100g pasta (your choice)
1/4 red pepper
1/4 yellow pepper
1/4 red onion
Handful of fresh tomatoes
Small handful of basil
Teaspoon of parmesan cheese
Salt and pepper to taste
What to do
Chop the peppers and onion, drizzle with olive oil and season with salt and pepper
Pop into the oven at 220 degrees and roast for 20 minutes
Cook the pasta as directed by the instructions on the packet
Once cooked, mix both the pasta and veggies together, add the tomatoes, sprinkle with parmesan cheese and season
