Ingredients

  • 100g pasta (your choice)

  • 1/4 red pepper

  • 1/4 yellow pepper

  • 1/4 red onion

  • Handful of fresh tomatoes

  • Small handful of basil

  • Teaspoon of parmesan cheese

  • Salt and pepper to taste

What to do

  • Chop the peppers and onion, drizzle with olive oil and season with salt and pepper

  • Pop into the oven at 220 degrees and roast for 20 minutes

  • Cook the pasta as directed by the instructions on the packet

  • Once cooked, mix both the pasta and veggies together, add the tomatoes, sprinkle with parmesan cheese and season
